Ingredients:
4 pieces of Tilapia
2 Cups Coconut Milk
1/2 Cup Cilantro
Lime Zest from one lime
1 tbsp Lime Juice
1 tsp Cumin
1/2 tsp Cayenne Pepper
1 tsp Salt
Add Coconut Milk, Cilantro, Lime Juice, Zest, Cumin and Salt to a blender.
Blend until you have a uniform mixture.
Pour the sauce into a stainless steel skillet and heat on high.
Once it as started to reduce add the thawed Tilapia and cook on each side for 3 minutes, or until done.
One the fish has finished cooking, remove and keep warm.
Turn up the heat on the skillet to reduce the sauce, consistency of heavy cream.
Plate the fish, add the sauce and chopped cilantro.
